Mango Muffins

Ingredients

  • 2 cups Flour (all purpose)
  • 1 tsp Baking Powder
  • 1/2 tsp salt
  • 1/2 cup Oil
  • 1 cup Sugar
  • 1/2 tsp Cardamon Powder
  • 1 1/2 cups Mangos (chopped)
  • 1 cup Mango Purree
  • 1/3 cup sugar (for dusting)
  • 1 tbs flour (for dusting)
  • 1/2 tsp cardamon powder (for dusting)

Directions

Preheat oven to 375 degrees F (190 C)

Grease a 12 cup muffin pan

Mix in a bowl: flour, baking powder, baking soda, cardamon and salt

Mix in another bowl: oil, sugar, and mago puree until smooth

Add and stir in mangos (chopped) and gradually blend in flour mixture

Spoon the mixture into muffin pan

Mix for dusting: sugar, flour, and cardamon

Sprinkle the mixture over tops of the muffins before entering into oven

Bake for 20 minutes and let sit for 5 minutes to cool
