Broccoli Alfredo with tofu

Ingredients:


1 package Marjon tofu
2 tbsp. veg. oil
Soy sauce (see tofu rec.)
2 tbsp. butter
2 cups heavy whipping cream
Y4 cup parmesan cheese  1 tsp. nutmeg  Salt (to taste)
2 cups pasta
1 head of broccoli
2 tbsp. basil
Coarsely ground black pepper

 

Directions:


Tofu: Stir Fry according to Tofu recipe except season only with soy and some
vegetable oil. You can cut Tofu in 2" strips rather than cubes. Set to side once done.

Alfredo Sauce: Melt 2 tbsp. of butter over medium high heat.
Add 2 cups of heavy whipping cream and bring to a boil. Lower
heat to medium. Add Y4 cup Parmesan cheese, 1 tsp. nutmeg, and a
dash of salt. Bring to a boil.
Whisk frequently untilthickened. If you don't notice sweet taste,
add another dash of nutmeg.

Pasta: The standard boil and drain. Pick pasta of choice. White definitely is tastier
than Tri-colored pasta with the alfredo.

Broccoli: Stearn and season with butter and basil.
Then top pasta with broccoli and tofu. Pour alfredo sauce over and sprinkle with coarsely
ground black pepper.
