INGREDIENTS
1 cup long grain brown rice
1 cup coconut milk
1/2 tsp, salt
Toasted coconut
slivered almond as topping
DIRECTIONS
- Rinse and drain brown rice & Place in a saucepan with 1 1/4 cups of water and bring to a boil uncovered over
medium high heat. - Then lower heat to lowest setting and coconut milk and salt
- Cover and cook until all liquid is absorbed (about 45 minutes).
- Do not stir rice.
- Let sit 5 minutes and then serve.
- Sprinkle rice with a little toasted coconut and slivered almonds.
