Ingredients:
1 package of polenta in plastic tube
Shredded white cheddar
Parmesan cheese
1 can quartered artichokes
1 can green olives (without pimento) Sauce- Yz box strained tomatoes
1 tbsp. olive oil Handful of freshly chopped basil
Salt cayenne to taste
Ring to taste
Directions:
Slice about 5" thick pieces of packaged polenta that you get in plastic tube
either at health food store or Publix.
Place on a baking sheet covered with foil. Now prepare a tomato sauce. Pour inl tbsp. olive oil and a bit of hing. Add a
handful of freshly chopped basil. Let basil heat for a minute or so. Add 12 box of
strained Pomi tomatoes (at Publix) Put in salt and cayenne to taste .. .let sauce
simmer for about 20-25 minutes. Spread tomato sauce over each Polenta slice.
Top each slice with some shredded white cheddar and Parmesan cheese. You
just want to cover the top with cheese. No need to drown the polenta.
Then place ~ of an artichoke (you can buy the quartered artichoke pieces at grocery) and two green olives (without Pimento) on each polenta slice.
Bake for 10-15 minutes at 350 until cheese is melted. Then let them warm with oven off for another 5-10 minutes or so.
