Easy Greek Rice Salad

INGREDIENTS

1 1/2 cup brown rice
1 1/2 cup chick peas
2 chopped red bell peppers 

1 1/2 cup chopped green olives
Handful freshly chopped cilantro
1 1/2 cup chopped celery
1 huge red tomato chopped
1 1/2 cup crumbled Feta
Dressing- 1 cup olive oil
1 tbsp. oregano  1 large fresh squeezed lime
Braggs Liquid aminos(to taste)

DIRECTIONS

  • Cook brown rice.
  • While rice is cooking, mix following uncooked ingredients in large bowl: 
    drained and washed chick peas, red bell peppers, green olives chopped, cilantro
    celery,red tomato, crumbled Feta cheese
  • Mix cooked rice with other ingredients.
  • Stir in dressing: Olive oil, oregano, squeezed lime, Braggs liquid Aminos to taste.
  • If you can't taste dressing in rice, add a bit more.
