Ingredients
- 1 Cup Quinoa
- 1 Can Black Beans
- 1 Large Red Pepper chopped
- 1 Apple
- 1/3 Cup Capers
- 1 Cup Celery (diced)
- 1 Cup Parsley (finely chopped)
- 1 Large Lemon
- Salt and Black Pepper to taste
Directions
Rinse quinoa and cook
Add red pepper, cilantro, black beans, capers, apple, and celery to large bowl
Add cooked quinoa to the bowl
Squeeze lemon over dish
Add salt, pepper
